Cook ravioli according to the instructions on the package. Pierce two pieces of mortadella onto each skewer. Add to pan to create crispness, then set aside. Add butter to the pan on medium low heat. Once butter is melted, add pistachios to your pan, reserving 1 tbs. for garnish. Stir the mixture constantly to not burn the butter. Cook for about 5 minutes or until the butter begins to foam slightly. The butter should start to form brown specks and smell nutty. Transfer cooked ravioli into the brown butter sauce and topped with grated parmesan cheese, and reserved pistachios. Serves 4.
