In a large skillet heat 1 tablespoon oil over medium-low. Once the oil is glistening add onion, garlic and ginger. Cook for 5 minutes or until soft.
Add in the mushrooms, sauté until soft, 3-4 minutes. Add meatballs to mixture and cook until temperature reaches 165 degrees.
Add the chopped raisins, nuts, parsley, salt and pepper.
Cook until heated through and serve in lettuce leaves.
