Place meatballs in air fryer basket and cook according to package directions.
Assemble arugula salad by combining bag of arugula, carton of cherry tomatoes, onion, extra virgin olive oil and lemon juice. Salt and pepper to taste.
In a nonstick skillet, heat parmesan cheese in 1 Tbs. piles. Once melted, flip over with nonstick spatula. about 1 min on each side. Transfer to a dish lined with parchment or waxed paper. Cool completely.
Arrange salad on platter and top with meatballs and parmesan crisps. Add more olive oil and lemon juice if necessary.
