Ingredients

  • Rosina Veal, Beef & Pork Meatball
  • Small Red Onion (Thinly Sliced)
  • Seedless Cucumber (Thinly Sliced)
  • Pita Bread
  • Tzatziki Sauce
  • Dollop of Yogurt for Garnish
  • Greek Olives for Garnish

Directions

In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, black pepper, dill, and garlic. Process until well combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor. After refrigeration, preheat oven to 350°F and arrange meatballs on baking sheet. Bake meatballs in a 350°F oven for 20-25 minutes. Set aside. Warm the pita bread while the oven is till warm. In a small bowl, combine the thinly sliced onion and cucumber along with enough Tzatziki Sauce to coat the onion and cucumber.

To Serve:
Place the warm pita on plate and spoon some of the onion and cucumber mixture onto the warm pita bread. Top each meatball with a dollop of yogurt and a Greek olive for extra garnish.
