Spaghetti Meatball Pie

Ingredients

  • 1/2 package (26 oz.) Rosina Italian Style Meatballs (about 25 meatballs)
  • ¼ cup chopped green pepper
  • ½ cup chopped onion
  • 1 package (8 oz.) spaghetti
  • 2 eggs, slightly beaten
  • ½ cup grated Parmesan cheese
  • 1 ¼ cups shredded Mozzarella cheese (reserve ½ cup)
  • 1 jar (26 oz.) chunky spaghetti sauce

Directions

Preheat oven to 375ºF. Sauté peppers and onions until softened, about 10 minutes. Once cooked, add the spaghetti sauce and set aside. Bring a large pot of water to a boil and cook spaghetti according to package instructions. Once cooked, drain and rinse with cold water and pat dry. Place cooked spaghetti in large mixing bowl; add eggs and Parmesan cheese and stir to combine. Press mixture into the bottom of a sprayed 9” pie plate. Top with 3/4 cup shredded mozzarella cheese. Thaw frozen meatballs in microwave for 2 minutes; once thawed cut each meatball in half. Layer the meatball halves over the cheese. Spoon the spaghetti sauce over the meatballs. Loosely cover with foil and bake for 20 minutes. Remove from the oven and sprinkle with 1/2 cup mozzarella cheese, bake uncovered for 10 more minutes. Allow to cool and cut into wedges to serve.

This is one of my favorite recipes. It's fairly inexpensive, mostly ingredients that I keep on hand, and easy to make! I just love it! Definitely a ⭐⭐⭐⭐⭐ recipe!

Love this recipe! However, the recipe I use from when I cut it off the bag years ago says 26 meatballs. You don’t need the whole 26 oz package. Maybe this is a typo on-line?
