BAKED PANCAKES & SAUSAGE BREAKFAST

Lazy LasagnaMakes 6 - 12 servings

Ingredients:

1 - 12 oz. bag Rosina Sausage Meatballs

(24 meatballs)

3 cups dry pancake mix

2.25 cups milk

1 - 20 oz. can crushed pineapple, well drained

confectioners’ sugar (optional)

maple syrup (optional)

Directions:

Preheat oven to 375ºF. Thaw meatballs in microwave for 1 minute. Cut each meatball into four slices and set aside. Combine pancake mix and milk in large bowl, stir until smooth. Stir in drained pineapple. Spread mixture evenly in a greased jelly roll pan (15” x 10”). Arrange sliced meatballs into 12 lengthwise strips on top of the batter. Bake for 30-40 minutes, until golden brown. Cut into 12 pieces. Serve sprinkled with confectioners’ sugar and drizzled with maple syrup.
