MARBLED MEATBALL BRUSCHETTA

Ingredient
8 each - Baguette, sliced and baked, see recipe
1 cup - Rosina® Wedding Soup Meatball (40049)
2 Tbsp. - Cherry Peppers
¾ cup - Tomatoes, chopped
½ tsp. - Oregano, fresh
½ tsp. - Basil, fresh
¼ cup - Mozzarella Cheese, shredded
Garnish - Basil Leaves, whole
PREPARATION:
- Toss together meatballs, cherry peppers, tomatoes and fresh herbs.
- Place 2 Tbsp of mixture on each slice of baked baguette.
- Sprinkle each baguette with 1 Tbsp of mozzarella cheese.
- Bake at 425° until cheese is melted.
- Garnish with basil sprig if desired.
BAKED BAGUETTE
Ingredient
8 - Baguette, sliced
1 Tbsp. - Garlic cloves, crushed
¼ cup - Olive Oil
PREPARATION:
- Rub garlic cloves on each baguette slice.
- Brush each slice with olive oil.

Bake at 350° for 5 minutes or until lightly toasted.
