Blue Cheese, Balsamic, and Caramelized Onion Biscuits
Featuring Rosina® All Beef Meatballs
1 oz. Rosina® Traditional Meatballs
3 oz. blue cheese, crumbled
1 cup cream of mushroom soup
3 oz. caramelized onions
1 cup dry biscuit mix
1 cup milk
6 Tbsp. french-fried onions, optional
Thaw 12 meatballs in the microwave for 1 ½ minutes. Heat oven to 375°F. Spray a regular size, 12 cup, muffin pan with cooking spray. Crush the thawed meatballs by applying pressure with the back of a fork.
In a small mixing bowl, whisk 1 cup of biscuit mix, with 1 cup of milk, and three eggs. Spoon 1 Tbsp. of biscuit mixture into each muffin cup. Top each cup with 1 crushed meatball, 1 tsp. cream of mushroom soup, ½ tsp. blue cheese crumble, ½ tsp. caramelized onions, 3 dashes balsamic vinaigrette, another crushed meatball, and 2 Tbsp. biscuit mixture. Bake for 30 minutes until golden brown. Let cool for 5 minutes, and then run a butter knife around the edges of each biscuit to loosen from the cups.
Optional, bake for ten minutes, then carefully sprinkle ½ tsp. of french-fried onions onto each biscuit.
